Crispy Kale, Sweet Potato and Parmesan Cheats Pizza

This is a great little recipe to have up your sleeve when you need to make a quick lunch or supper. Feel free to experiment with different toppings too.

Ingredients

Serves 2

2 large tortilla wraps

100g kale, roughly chopped

50g sweet potato, peeled and grated

1/2 red onion, finely sliced

1 clove garlic, sliced

25g parmesan cheese

2 tbsp tomato puree

2 tbsp olive oil

Salt and pepper to season

Method

  1. Preheat the oven to 200’C/gas mark 6. Heat the oil in a large frying pan and sauté the onion and garlic for 2 minutes. Add the kale and sweet potato and continue to cook on a medium heat for a further 2 minutes.
  2. Remove from the heat stir in half of the parmesan, and season to taste.
  3. Spread a tablespoon of tomato puree on each tortilla wrap, divide the kale and sweet potato mixture between them, sprinkle the remaining cheese on top, followed by a drizzle of olive oil, transfer to a baking sheet and cook for 8-10 minutes, or until all the edges have become beautifully crisp and browned. Serve immediately.
