Pea, kale and lemon hummus

This hummus is so easy to make, packed with goodness and is as good for kids as it is for adults. My youngest loves to dunk breadsticks and pitta bread into anything dankable, so I made this in an effort to get some extra goodness into her. We both ended up sitting with the bowl of hummus, enjoying is as much as each other. I use very little oil when I make hummus, instead opting to use the chickpea water form the can. I don’t alway find tahini necessary when other flavours are added to hummus. It is better with, but when making this, I didn’t have any,yet carried on regardless. Thus I have included it as an optional ingredient below.

Ingredients

1 400g tin of chickpeas

70g frozen peas

25g curly kale

zest of 1 lemon

1 tsp tahini (optional)

50ml olive oil

juice from drained chickpeas

Method

  1. Blanch peas and kale together in boiling water for 2 minutes.
  2. Drain and rinse chickpeas but reserve the liquid.
  3. Place all ingredients into a blender along with 100ml chickpea water. Blitz until totally smooth. Add more chickpea water to get the consistency you like most.
  4. Season to taste (sparingly or not at all if serving to little ones).
